Cajun Rice and Beans
1 cup Basmati brown rice
2 cups water
1 can garbanzo beans (chick peas), rinsed and drained
1 can black beans, rinsed and drained
4 large mushrooms, sliced
1/2 bell pepper, sliced or chopped
1 jalapeno or other hot pepper, chopped
1/2 large onion or 1 small onion, chopped
1/2 cup frozen peas
1/2 cup frozen corn
1 tsp Cajun seasoning
1 tbsp Tabasco or other hot sauce
1 tsp cayenne pepper
1 tsp black pepper
1 tsp sea salt
1 tsp garlic powder
Place rice in a pot and cover with the water.
Add mushrooms, bell pepper, jalapeno, and onion.
Add the rest of the ingredients.
Heat on high until the water starts to boil and then cover the pot and turn the heat down to low and simmer for 45 minutes. Turn off the heat and let the pot sit for about 15 minutes.
Uncover the pot, fluff the contents, and serve.
