Garbanzo Burger
2 cans garbanzo beans (chick peas), rinsed and drained
1/4 cup frozen peas, thawed
1/4 cup frozen corn, thawed
4 medium size baby carrots
1/4 cup Stubb's Original Bar-B-Q Sauce
1/2 cup cornmeal
1 tbsp lemon juice
1/4 tsp sea salt
1/4 tsp garlic powder
1/4 tsp black pepper
1/4 tsp cayenne pepper
1/4 tsp paprika
Preheat oven to 350°.
Place 1 can of the garbanzo beans in a food processor along with the peas, corn, carrots, and barbecue sauce and pulse until you have a paste with small chunks of the vegetables showing.
Add the paste to the other can of beans in a mixing bowl and then add the rest of the ingredients.
Mix thoroughly and then divide into 6 or 8 equal portions. Form the portions into patties and then place on a parchment paper covered baking sheet.
Bake at
350° for about 40 minutes, turning the patties over about half way through.
