These burgers make a great meal on homemade bread with your choice of toppings such as tomato, onion, pepper, pickle, salsa, barbecue sauce, or mustard.
1
15.5 oz can of black beans rinsed, and drained.
1
15.5 oz can of garbanzo beans (chick peas) rinsed, and drained.
1
tsp garlic powder
1/2
cup of corn
1/2
bell pepper (or a pepper of your choosing) chopped
1/2
onion chopped
1/2
cup of salsa
1/2
cup of cornmeal
2
tsp of ground cumin, chili powder, or Cajun seasoning
2
tsp of cilantro
2
tsp of hot sauce or 1 hot pepper chopped
Preheat
oven to 350°.
Place
onion, bell pepper, corn, and garlic powder in a microwave safe bowl
and heat covered on high for about 3 minutes.
Add
the garbanzo beans to the heated mixture, stir, and then run in a
food processor or blender until you have a paste with small chunks of
vegetables running through.
To
this paste, add the black beans, salsa, cornmeal, cumin, cilantro,
and hot sauce and mix thoroughly.
Use
a knife to divide the mixture into 8 equal portions and form each
portion into a patty and place on a parchment paper covered baking
sheet. It may be easier to form the patties if you let the mixture
sit for a half hour or so or store it in a refrigerator for a while.
Bake
for 35 – 40 minutes, turning over once about half way through.
Let
cool and serve or wrap and freeze.
